Pumpkin Scones
Oven temp required approx: 200oC
Cooking time approx: 15mins
Preparation time: 30mins
60g butter or margarine
½ cup caster sugar
1 egg
1 cup cold mashed pumpkin
2 cups SR flour
Cream butter and sugar, then add egg and pumpkin. Add flour and mix well. Pat out on floured board and cut into squares. Place on greased oven tray and place in oven (approx 200oC). Cook for 15 mins.
Damper
Oven temp required 160-180oC
Cooking time approx: 30-40mins
Preparation time: 30mins
Makes approx : 8 servings
5 cups SR flour
1 tbsp baking powder
Pinch salt
1 tbsp olive oil
½ cup skim milk powder (optional, but recommended)
Warm water
Mix flour, salt, milk powder, oil and milk to a soft dough. Heat a camp oven or large round cake tin in the oven. Remove it, spray with a little cooking spray and add dough to hot pan. Return to oven immediately and cook for approx ½ hour. Test with skewer, and return to oven for 5-10 mins if still sticky inside.
